Ah it’s Friday !!

Yup it’s Friday.. does it matter to me, actually no.. Now all days are same. But this week was really hectic. My son was down with cold and cough. My husband was on business trip. He came back yesterday night, so I know what day is today 😝. Handling toddler all alone is really difficult when they’re ill. I don’t know how single mom’s do it all alone. Really they are super women’s. Mostly I spent whole week just taking care of my son, cooking food for him, laundry, cleaning the mess around the house. Unfortunately weather was really good but I couldn’t enjoy. I took my son out for walk yesterday evening, couldn’t stop myself going out. I met one lady, who was really sweet. She also explained how happy she was because of sunny weather. I realise weather does matter people mood. Hoping to see more sun in coming days in UK😊 I didn’t cook food properly for myself whole week, yes felt lazy because have to cook food for alone. I was tensed also because my son unwell. Jeera Rice/ Cumin Rice

Today I wanted to cook rice for my husband lunch box, but bored with plain rice. Then suddenly realised jeera rice go well with palak mushrooms. I prepared palak mushroom for dinner yesterday.. It’s easy and tasty way of cooking rice😊 I usually cook jeera rice with palak mushrooms, palak paneer and pepper chicken. Jeera/ cumin is good for digestion. I usually don’t add any spices like cardamom, cloves like restaurants receipe. I prefer to keep it simple because usually my side dish with jeera rice will be full of spices. I used pressure cooker, you can use normal cooking pan also. I used butter, you use oil or ghee also. But butter or ghee gives different flavour, which I like it a lot. Ingredients 1. Basumati Rice - 1 cup 2. 2 tablespoon of jeera/cumin 3. 15 cashewnuts 4. 2 tablespoon of butter/ghee 5. Salt to taste 6. Veg Pulao

Veg Pulao very aromatic, tasty and easy to prepare. Its healthy also. Usually I like the texture of the rice to be little soft in pulao than being the way they are served in restaurants. You can use pan or pressure cooker for this preparation. I usually use pressure cooker, because I feel its easy compared to the pan:) I didn't add onion in this preparation, because I like veg pulao without onion. Please add onion along with garlic and ginger, if you like to. You can add carrot, cauliflower, potatoes also. Adding capsicum gives different flavor. I prepare veg pulao when i want to cook something quick and have tasty food. You can have veg pulao with raitha, potato crisp.. Tomato Rice is one of the most popular south Indian dish. It can be prepared in less than 40 minutes. Really tasty and easy to cook. We can serve tomato rice with chips. That's one of my favorite combination. :) Ingredients 1. 1 cup of Sona Masoori Rice 2. 2 medium size tomatoes, finely chopped 3. 1/2 cup of peas 4. 1/2 cup of corn 5. 2 tbsp of red chili powder 6. 2 green chili, finely chopped 7. 3 cloves of garlic 8. Small slice of ginger 9. 1 medium size onion, finely chopped 10. 1 tbsp of mustard seeds 11. Salt to taste 12. 1/4 cup of coriander leaves 13. 4 tbsp of sunflower oil Instructions: 1. Cashew nuts fry

In our native (Mangalore) we have many cashew tree at home. My husband loved cashew nuts. He would loved to have all the time. So I thought to try this recipe at home.This is spicy and crunchy. This came out really yummy !!! Spicy cashews are quite addiction :)  I have used butter, but you can use ghee also.. Ingredients 1. 2 cups of cashew nuts 2. 1 tbsp of chili powder 3. 1 tbsp of pepper powder 4. 1 tbsp of garam masala 5. Butter to fry 6. Salt to taste Instructions 1. Keep the frying pan on the gas and add butter 2. Once the butter is hot add the cashew nuts 3. Fry the Cashews, turning once, until light brown and crispy on medium heat 4. At the end, add chili powder, pepper powder, garam masala and salt. Mix it well 5. Transfer the cashew to a plate. Let it cool slightly, about 15 min and serve

Salmon Fish Fry - Indian spices (Mangalorean Style)

I grew up eating fish. My family enjoyed a fish meal everyday usually mackerel (bangude), lady fish, sardines (Boothai), Anjal(kingfish). I am from coastal region of Karnataka,India. We feel preparing  fish is easy compared to veggies:) because we love to eat fish.. We got salmon other day. Salmon is one of the source of omega-3. Wanted to try salmon with Indian masala. In our native we use this masala for almost all fish fry. Sometimes when you don’t find good fish, then use the same masala to fry veggies.. Eg; Potato, Bringle (egg plant).. Ingredients 1. 2 Fresh Salmon Portions skinless and boneless (250 grams) 2. 12-15 dry red chillies 3. 3 cloves of garlic 4. 1 inch piece of ginger 5. 1/4 tsp Tamarind paste (or 1/2 lemon juice) 6. Crispy Smashed Coriander Potatoes

  Potatoes forms the bases for many economic and wonderful healthy vegan recipes. Many of us like Potatoes. When we experience less time or energy, but feels like having some yummy dish, then one of the best choice is potatoes :) Crispy Smashed Coriander Potatoes is one of the tasty and easy recipe.  Ingredients: 9 Unpeeled Baby Potatoes 2 table spoon sunflower oil 3 table spoon butter 1 table spoon chopped fresh Coriander leaves Salt and freshly ground Black Pepper, to taste Instructions: 1. Put the potatoes in a sauce pan. Add salt, potatoes and water.  Cook until tender, around 20 minutes. 2. Drain and let cool slightly, about 10 minutes 3. Using pork or spoon, smash the potatoes until the potatoes are half inch thick but still in one piece. 4. Keep the frying pan on the gas and apply oil.
