Salmon Fish Fry - Indian spices (Mangalorean Style)


I grew up eating fish. My family enjoyed a fish meal everyday usually mackerel (bangude), lady fish, sardines (Boothai), Anjal(kingfish). I am from coastal region of Karnataka,India. We feel preparing  fish is easy compared to veggies:) because we love to eat fish..

We got salmon other day. Salmon is one of the source of omega-3. Wanted to try salmon with Indian masala. In our native we use this masala for almost all fish fry. Sometimes when you don’t find good fish, then use the same masala to fry veggies.. Eg; Potato, Bringle (egg plant)..

Ingredients
1. 2 Fresh Salmon Portions skinless and boneless (250 grams)
2. 12-15 dry red chillies
3. 3 cloves of garlic
4. 1 inch piece of ginger
5. 1/4 tsp Tamarind paste (or 1/2 lemon juice)
6. Salt to taste
7. Half cup of semolina (Suji)
8. Oil to shallow fry

Instructions:
1. Remove the scales from salmon fillets. Cut into small pieces and wash well. Drain completely  and keep aside.
2. Add red chillies, garlic, ginger, tamarind, salt into a blender and prepare a smooth paste. Add only little water while preparing paste.
3. Taste the masala for salt,spice and sourness.
4.  Rub the red masala all over the fish. Allow to rest for 2 hours
5. Coat the fish from all the sides with semolina
6. Keep the frying pan on the gas and apply oil.
7. Once the oil is hot, place the fish in the pan.Apply little oil on top of them.
8. Fry the fish, turning once, until golden brown and crispy on medium heat.
9. Serve the fish with lemon wedges
