Tomato Rice
Tomato Rice is one of the most popular south Indian dish. It can be prepared in less than 40 minutes. Really tasty and easy to cook. We can serve tomato rice with chips. That's one of my favorite combination. :)
Ingredients
1. 1 cup of Sona Masoori Rice
2. 2 medium size tomatoes, finely chopped
3. 1/2 cup of peas
4. 1/2 cup of corn
5. 2 tbsp of red chili powder
6. 2 green chili, finely chopped
7. 3 cloves of garlic
8. Small slice of ginger
9. 1 medium size onion, finely chopped
10. 1 tbsp of mustard seeds
11. Salt to taste
12. 1/4 cup of coriander leaves
13. 4 tbsp of sunflower oil
Instructions:
1. In a pressure cooker, heat the oil. Keep the flame to a low and add mustard seeds and crackle them.
2. Add the finely chopped onion and fry till onion turn light red
3. Add the chili, chopped ginger and sliced garlic and fry it till raw aroma of ginger - garlic goes away
4. Add the finely chopped tomatoes and red chili powder, Cook for 2 minutes
5. Add peas and corn.
6, Add the rice, Stir the rice with mixture very well. Saute for a minute.
7. Add 2 cups of water and salt. Cover the cooker for 2 whistles on medium flame,
8. When the pressure settles down on its own, Then remove the pressure cooker lid.
9. Add the coriander leaves and serve it
